Spiced stem ginger flapjack

150g butter 2tbsp stem ginger syrup
75g soft brown sugar 250-300g oats
3tbsp golden syrup 4 pieces of stem ginger (in syrup) chopped

Before you start:

  • Preheat the oven to 160°C fan.
  • Line a 20cm x 30cm baking tray with baking paper on the base and around the edge.

Top Tip!

Score the surface of the flapjack into portions with a knife while it is still hot to make it easier to slice when cool.


  1. Melt butter, sugar, golden syrup and stem ginger syrup in a large pan over a low heat. Stir until melted.
  2. Add the oats and chopped stem ginger.
  3. Stir thoroughly and press into the baking tray, evenly spreading out the mixture.
  4. Bake for 25 mins until golden brown.
  5. Leave to cool in tin before transferring onto a wire rack.
